These are a perfect snack for my toddler. My husband and I like them, too. They buy me time while I’m preparing a better meal or when we need some on-the-go snacks.
3/4 cup oat flour
3/4 cup dried oats
1/4 cup flax meal
3 Tbs water
1/4 cup maple syrup
1/4 cup dried goji berries
1/2 cup dates
2 tablespoons chia seeds
1/4 coconut oil, plus some for greasing the the muffin tin
1 tablespoon vanilla extract
1 pinch of pink Himalayan sea salt
Preheat oven to 350° F. Mix flax meal with water and set aside in a bowl. Mix chia seeds with maple syrup and let set aside in a bowl. In food processor pulse 3/4 cup quick oats into a powder. Toss in larger dried fruit like the dates or dried figs. Pulse 1-2 times. Then add smaller dried fruit like goji berries or raisins. Add 3/4 cup dried oats, and salt. Pulse once more. Pour all ingredients into a large mixing bowl. Mix well. Pour mixture into greased mini muffin tin. Bake for 12 minutes. Remove from oven and let cool before removing from tin. I haven’t frozen mine but I imagine that you could easily freeze them and let sit out for about 30 minutes before serving.
Optional add-ons are protein powder, sunflower seeds, other types of dried fruit, shredded coconut. I use the ingredients I chose because they are good for me, a lactating mother, and easy for my daughter to eat. She cannot yet chew nuts or seeds very well.
