Avocado Chicken Salad

Delicious, healthy chicken salad without mayo!

2 c. chopped or shredded cooked chicken. Remove all skin, bones and cartilage.

1/2 c. chopped celery

1 tbs yellow mustard

1tsp dijon mustard

1 whole small avocado. Can add half avocado at a time and mix well to see how much you want to add.

1/4 tsp sea salt

1/4 tsp fresh cracked pepper

Optional add-ons are raisins or fresh grapes cut in halves. Sliced, blanched almonds or toasted pecan pieces. Adjust salt and pepper to your own preference. I would consider this one service size though it is a large serving size. Can be enjoyed with crackers, by itself or in a croissant as a sandwich.  See my recipes for roasted whole chicken  and boiled whole chicken.
